Creamy Chicken Fajita Soup

Mexican style food is my all time favorite and putting fajitas in a soup is just the most amazing thing. I honestly may get this cooking for dunner again tonight. I love a great soup recipe and this one really is one of my favorites. Filled with shredded chicken, corn, peppers, onions, and fajita seasoning. To make it creamy thought we added cream and cheese to the broth for a super yummy soup recipe! Make sure to check out some of my other favorite soups after you try this one like my, Taco Soup!



Ingredients

  • 1 pound chicken Breast
  • 3 cups bell pepper
  • 1 cup onion
  • 15 oz corn (1 can)
  • 10 oz rotel (1 can)
  • 1 cup salsa
  • 32 oz chicken broth
  • 1 oz fajita seasoning
  • 3/4 cup half and half
  • 1 cup fiesta blend shredded cheese
  • Optional: Cilantro and tortilla chips for topping!

Instructions

  1. Add chicken breast, bell pepper, onion, corn, rotel, salsa, chicken, and chicken broth into a large pot. Add fajita and mix together. 
  2.  Allow to boil then reduce heat to medium and shimmer for 30 minutes. Remove chicken and shred then add the shredded chicken back into the pot.

Easy Skillet Cashew Chicken

This easy skillet cashew chicken is really simple, and it’s a quick 30-minute meal! Mine took a bit longer than 30 minutes because while making it, my daughter decided it would be a good idea to try and stir the sauce mixture, and it spilled everywhere. My kitchen still smells like soy sauce & sesame oil!



So, I had to make another batch of sauce. That girl loves to be in the kitchen helping me, but she just makes a mess of everything. If it wasn’t for her cute blond hair and pigtails I might just be a little upset about it 😉

I would suggest putting your rice in the pan to cook first. Because by the time the rice is cooked and cooled a bit, this skillet cashew chicken will be all ready to go.

Ingredients
sauce

  • 1 cup low-sodium chicken broth
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup hoisin sauce
  • 2 tablespoons rice vinegar
  • 3 tablespoons brown sugar
  • 4 cloves garlic, finely minced or pressed
  • 2 teaspoons fresh grated ginger
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch

chicken

  • 1 tablespoon olive oil
  • 2 lbs boneless, skinless chicken breasts, cut into small bite-size chunks
  • salt & pepper
  • 1 cup cashews, unsalted or lightly salted
  • 1 tablespoon cold water
  • 1 tablespoon cornstarch
  • chopped green onions, for garnish

Instructions

  1. Combine all the sauce ingredients in a glass measuring cup or a bowl. Whisk together to break up clumps. Set aside.
  2. Cut chicken into small, bite-size pieces and sprinkle with salt & pepper. Heat olive oil in a pan over medium-high heat. Add chicken pieces and cook until lightly browned on the outside, about 8 minutes. They may not be cooked all the way inside, but that's ok because they will cook more while simmering in the sauce. The chicken should look cooked on the outside. Drain.

Crispy Coconut Chicken

Crispy Coconut Chicken – This simple dish is gluten free and packed with flavor. Crispy coconut coated chicken nuggets, strips or breasts is a winner with all family members.

If there is one dish that is ALWAYS raved about when I make it by my kids or company, it’s this Crispy Coconut Chicken.


I am sure by now, those of you who follow us, realize that we love coconut.

Ingredients

  • Vegetable oil for frying
  • 1/2 cup cornstarch
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tsp cayenne pepper {optional}
  • 3 large eggs, lightly beaten
  • 3 - 4 cups of sweetened coconut flakes (Baker's Coconut)
  • 3 - 4 medium boneless, skinless, chicken breasts, cut into strips or nuggets.

Instructions

  1. In a medium pot, add 2 - 3 Inches of oil. Turn burner to medium and allow oil to get nice and hot. The perfect temperature should be 365*F
  2. In a bowl mix cornstarch, salt, pepper & cayenne pepper. Set aside.
  3. In a second bowl, add 3 eggs and lightly beat.
  4. In a third bowl add coconut flakes.
