Kiwi Passion Fruit Panna Cotta

Mixing the kiwi with passion fruit juice diluted the lovely green color, but I still think the panna cotta turned out gorgeous. What do you think?
One great thing about this dessert is it is so incredibly easy. It takes a little time because you have to make two separate layers and allow the first layer to set before adding the second one. But the actual process is beyond simple.
Passion fruit juice, a little sugar, gelatin, and kiwi puree are heated and poured into dessert cup. This layer has to chill for at least 2 hours to set. Then milk, gelatin, heavy cream, sugar, and vanilla bean paste are heated and poured over the kiwi layer. Put the panna cotta back in the fridge for another 2 hours to set.
To get the layers angles like I did, use an empty egg carton. Just set the cup at an angle in the carton. You can also use a muffin pan in place of an egg carton.
Place a tea towel over the pan and set the dessert cups at an angle over the tea towel. The tea towel will keep the cups from slipping.
This would be a fun green dessert for St. Patrick’s Day!

- 1 cup passion fruit juice
- 3 tablespoons sugar
- 1 envelope unflavored gelatin powder (about 2 teaspoons)
- 1 and 1/2 cups kiwi puree strained to remove the seeds
- Vanilla Bean Layer
- 1 cup milk
- 1/2 cup granulated sugar
- 1/8 teaspoon salt
- 1 envelope unflavored gelatin powder (about 2 teaspoons)
- 1 tablespoon vanilla bean paste
- 2 cups heavy cream
Instructions
- Make the kiwi passion fruit layer
- Stir the passion fruit juice and sugar together in a medium saucepan. Sprinkle the gelatin over the top and let set for 5 minutes to bloom.
- Heat the passion fruit juice over medium, stirring until the gelatin powder is dissolved and the mixture is steaming. Remove from heat and stir in the kiwi puree.
