STRAWBERRY FRENCH TOAST BAKE

French Toast Bakes are super easy to assemble the night before and are always a hit with my family.

Our latest version was this Overnight Strawberry Cream Cheese French Toast Bake. My kiddos are big berry monsters and always get so excited whenever we make this.

This Overnight Strawberry Cream Cheese French Toast Bake would be amazing if you have family coming over. They are seriously going to love waking up to this in the morning.

Plus, you can’t beat how easy it is to make ahead the night before too.



If you have lots of fresh juicy strawberries, this french toast bake would be perfect. You can even use frozen if that’s what you have on hand.

The sweet berries go so well with the brown sugar streusel topping and soft cream cheese filling. If you’re not a fan of cream cheese, you can certainly leave the filling out if you prefer.

Ingredients

  • 1 16-ounce loaf of French bread or sourdough bread cut into 1-inch cubes with the ends discarded. Use gluten free or day old low carb almond flour bread if necessary
  • 1/2 cup cream cheese softened (optional - leave out if preferred)
  • 1/3 cup maple syrup or honey divided (can also swap in your favorite sugar free Maple Syrup or Sukrin Syrup for low carb)
  • 1-1/2 - 2 cups sliced strawberries divided
  • 6 large eggs
  • 1-1/4 cups milk I used almond milk
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup brown sugar or coconut sugar optional - add if you like your french toast sweeter - I left it out since we usually drizzle with maple syrup once baked
  • 2 teaspoons pure vanilla extract

Streusel Topping:

  • 1/3 cup all-purpose flour can substitute with gluten free 1-1 flour
  • 1/3 cup packed brown sugar or coconut sugar (for low carb use erythritol or monk fruit)
  • 1/4 teaspoon ground cinnamon
  • 4 tablespoons unsalted butter cold and cubed
  • Optional Toppings:
  • maple syrup
  • more fresh berries
  • whipped cream
  • powdered sugar

Instructions

  2. In a medium bowl, combine the flour, brown sugar, and cinnamon together. Cut in the cubed butter with a pastry blender or two forks. Set aside in the fridge.

No-Bake Date Energy Bar | Healthy Vegan And Gluten Free

These no-bake date energy bar are loaded with natural ingredients like dates, walnut, almonds, and nuts like pumpkin seeds and sunflower seeds. Being no-bake, they require very less time to prepare. Just get all ingredients in a food processor, pulse them for about 1-2 minutes and set them in a baking pan. Leave them overnight in the fridge to set in and cut them in the desired shape.


Dates are a good source of vitamins, minerals, fiber, calcium, potassium and much more. Eating them every day helps to meet our daily requirement of vital nutrients. Since dates are sweet in taste,  works as the natural sweetener in these no-bake bars. Also, there is no need to add any liquid to combine other ingredients, dates have enough moisture to bind everything together.

Ingredient                                                                                   8-12 bar
2 cup dates seeds removed( I used mejdool date)
1 cup walnut
1/2 cup almond
1/2 cup grated coconut
A pinch of salt
1/2 cup mixed seeds like sunflower and pumpkin

Method

  • First of all, clean the dates and remove seeds.
  • In a food processor add walnut, almond, and coconut. Pulse for 10 seconds. Repeat this until dry fruits are broken into pieces.
  • To this add seeds and dates. Pulse for 20 seconds. Repeat this for 2-3 times till dates are crushed and mixed with dry fruit mixture.
  • Line a parchment paper in a baking pan or in a plate.
  • Pour this mixture in the pan and set it with the help of a spatula. Spread some seeds on top. Set them and keep in the fridge until they firm.
  • Cut them into the desired shape. No-bake date energy bar ready to serve with milk in the breakfast time or snack time.

Simple Maple Vanilla Baked Pears

First things first: hi! I’m currently in St. Lucia sipping a big ol’ margarita on the rocks while watching the sun set over the pristine water. Wait. Wasn’t I just caught in a blizzard 4 days ago? January, why you be so crazy.

I’m really excited because today’s post is sponsored by my friends at Stemilt Growers. Remember when I visited their orchards back in July? It was my first time in Washington, though I went back in October on my book tour (hi Seattle friends!). When I visited the orchards in July, I went cherry picking, explored the epic grounds, and tasted the world’s juiciest apples and sweetest cherries. The pears weren’t quite ready to be picked yet, so they promised to send me a box when they were.



Baked pears. I know it all sounds pretty simple. And you don’t even see chocolate or frosting or caramel explosions in these photos. But let me tell ya something. These maple vanilla baked pears? They’re pretty epic. Such a big statement for a humble fruit, no? Well, they’re a prime example of how simple ingredients, good-for-you, and REAL whole foods can come together to produce a dessert that can stand up to a chocolate frosting caramel exploding something. (Which reminds me, have you made my snickers cupcakes yet?)

When Stemilt sent me pears, the first thing I did was eat them. I believe I inhaled 2 in a matter of 30 seconds. Then I got down to business and began brainstorming a new recipe to make. Actually, before the brainstorming, I hiccupped because I just ate 2 giant pears in under a minute.

Baked pears came to mind first. When I’m feeling lazy but want a little something sweet after dinner (always), I often bake an apple, drizzle with honey or melted peanut butter and top with crunchy granola. It’s simple, it’s kinda healthy, and on a cold winter night– hits the spot. In my real mind, baked pears dripping with pure maple syrup sounded just as fabulous and in my weird food blogging photographer mind, they sounded pretty.

Ingredients:

  • 4 D'Anjou pears (aka Anjou pears)
  • 1/2 cup (120ml) pure maple syrup
  • 1/4 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • optional toppings: maple pecan granola, Greek yogurt

Directions:

  1. Preheat oven to 375°F (190°C). I don't line my baking sheet when I make these, but you absolutely can with parchment or a silicone baking mat.
  2. Cut pears in half, then cut a small sliver off the underside so the pears sit flat when placed upright on the baking sheet. See video above for visual. Using a large or medium cookie scoop or melon baller (or even a teaspoon), core out the seeds. Arrange pears, facing up, on the baking sheet. Sprinkle evenly with cinnamon-- feel free to add more cinnamon if you'd like.

Cinnamon Coffee Cake Bread


Ingredients:
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup butter at room temperature
  • 1 cup white sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup brown sugar
  • 2 heaping tablespoons ground cinnamon

Instructions:

Preheat oven to 350 degrees and spray a 9x5 inch loaf pan with non stick spray. Mix the flour, baking soda, baking powder, and salt together in a bowl and set aside. Mix the buttermilk and vanilla in a measuring cup and set aside. Mix the brown sugar and cinnamon together in a bowl and set aside. In a bowl cream the butter and white sugar together and then add in the eggs one at a time. Add 1/3 of the flour mixture and mix to combine, then add 1/2 of the buttermilk mixture. Repeat this and end with the flour. Pour 1/3 of the batter into the prepared pan and top with 1/3 of the cinnamon mixture, repeat so that the final layer of cinnamon mixture is the topping on the bread. Bake for 50-60 minutes or until a cake tester comes out clean.

Recipe - Best Southern Buttermilk Biscuits

These Southern Buttermilk Biscuits are super easy and melt-in-your-mouth delicious! They're tender and fluffy; perfect for drizzling with honey, butter, or sugar.

Serves: 10




INGREDIENTS

2 cups unbleached all-purpose flour, plus more for dusting the board
1⁄4 teaspoon baking soda
1 tablespoon baking powder
1 teaspoon table salt
6 tablespoons unsalted butter, very cold
1 cup buttermilk
Optional: ½ cup sugar for topping, honey, or butter

DIRECTIONS

  1. Preheat oven to 450F, with rack on middle position. Line a large baking sheet with parchment paper or silicone baking mat.
  2. Combine flour, baking soda, baking powder, and salt in a bowl (or bowl of a food processor.) Using a pastry cutter or a food processor, cut the butter into chunks and cut into the flour mixture until it resembles course meal. If using a food processor, just pulse a few times until this consistency is achieved. Gently add the buttermilk and fold with a rubber spatula just until combined wet/dry ingredients are combined - don't overmix. If it's too dry, add a bit more buttermilk. Dough should be relatively wet.

Recipe - Cheesy Chicken and Broccoli Puffs

Cheesy Chicken and Broccoli Puffs for the dinner win! Made with rotisserie chicken and puff pastry, these puffs are delightfully easy to make and are a cheesy favorite with the family!

Serves: 8 puffs



Ingredients

1 Tbls olive oil or butter
¼ small onion, chopped
1 cup cubed, cooked chicken
¾ cup chopped broccoli
4 oz mushrooms, sliced
2 sheets of puff pastry, thawed
1 cup shredded cheese (cheddar, Swiss, Mexican blend)

Instructions

  1. Preheat oven to 400 degrees.
  2. Saute onion in olive oil for 3-5 minutes or until translucent.
  3. Add mushrooms and continue sauteing for 2-3 additional minutes.
  4. Add broccoli and chicken and continue cooking for 2 more minutes. Set aside.
